No. You can only install an OS from the list available in the Manager. Some of them may have a monthly license cost, like Windows, cPanel, Plesk, and some others.
If you want to install some Linux distro which is not available, you can try to bootstrap it from rescue mode, but think twice before doing that, as it's recommended only for advanced users.
If you have your own Windows license, you can add it to your Manager, in order to use it at no additional cost. Otherwise, installing Windows on your server without either paying OVH for the license, or providing your own license, even when possible, would be illegal, and you could get your server suspended for that.

From the Manager, you will be able to choose between different operating systems to install. You don't have to worry about ISO images, as OVH internal system will automatically setup the OS for your.
Can I also supply my own OS?

Hi,
Sorry, it's maybe a stupid question but this is the first time I'm gona rent a dedicated server.
So I order my server and I got my server. Then what? Can I just upload my own ISO image and install it, or how am I gona install my OS on the dedicated server? Can I provide my own ISO or do I get a list of 'choices' of Operating Systems I can install?
And a second question, about the AntiDOS. I'm planning on renting a dedicated server and host a game ( arma 3 ) on it. Can I rely on the AntiDOS, not the game anti DDOS?
Thanks for responding
