It's not as easy as having a guide. Honestly the fact you're asking such a question, I'd suggest you don't bother - You'll hit too many issues down the line that you won't have a clue how to fix, and then quite frankly, you'll be screwed.

I'm with Criot on this, if you need to ask the question it sounds like you don't have enough experience to set up and manage VPSs on your server, and a written guide won't be enough to tackle all the problems you'll encounter

- VMware ESXi: One of the most solid virtualization solutions. Management is done with the vmware vSphere client.
- Proxmox: Debian Linux based, comes with a Web UI for management. Support full virtualization (KVM) as well as Linux-based containers(OpenVZ on version 3, LXC on version 4). Really versatile.
- Citrix Xen Server: Don't have really much information about this one
