Is there any software that auto scans for known warez files? Or something that scans incoming files and compares them (with a sha1/md5 hash or something) to a big database of suspicious files?

If there was something like this, sites like Rapidshare, Megaupload, and others would be taken down. The best you could hope for is have someone code a script for you to watch the incoming files and check their names against a database, so if they include a name of a scene group (say pukka, diamond, vortex, or some other) they would be deleted or something. Now I have never heard of anyone doing this so I wouldn't know if its doable, but again, best you could hope for.

For the most part you don't have to scan the files, people report them (if they bother to) and then you delete the files, not much else to it.

OVH would contact you first and in most cases I think you get 72 hours to take down the content. In extreme cases OVH would cut the server off, perhaps in cases of extreme warez distribution, child porn, extreme porn, etc. But in general you would get a warning, but fail to adhere to that warning will result in a disconnection, as it would be a breech of your contract with OVH. Just keep checking those files!

Right now I host a few websites for people and I am making a very sexy looking control panel for the hostees... sort of a hobby.

Anyway.

If I were to sell hosting to any old person and any old person hosted copyrighted material on my server... who would be contacted by the authorities? I don't want the whole server gone down if its just the case of 1 person against the rules... I want to be able to take the nessecary action myself.
