EG Max only one 750GB drive instead of 2?

Doing raid-0 is not an issue and you don't need bios access. The problem is when you do a reinstall of the os using manager it sets the partition size based on the standard config 750gb in raid 1, as such you afterwards have to modify the partition in linux to utilize the full available space using a partition manager... for the life of me I can't remember which one I used when I did it last but it was relatively painless...If you've done a reinstall after setting to raid0, you are in raid0, but you have 750gb of unused space.

No, support are English located in London. OVH don't use cheap crappy support teams. You don't get to be Frances biggest host like that...

is this correct?
it doesnt show the both drives on that page should it and if i do it with the way its showing it to me now will that configure both drives even tho on that page its only showing one?
It is correct because the the EG and above do not support no RAID or RAID 0 installations. If a server supports RAID 0 (Like the SP Range) then when you add a partition in RAID 0 then it has a 2 x next to it.

You should see two bars anyway red or green representing both drives, but it is not possible to configure each drive individually.

It is possible, they just won't do it because its sold as RAID1 only, and the technicians don't have time to change it. All RAID cards can do RAID1 and RAID0, so it has to be changeable.

I'm guessing this is because its hardware RAID, and to change it requires BIOS level access, which isn't yet provided. When real KVMoIP comes around you will be able to change this yourself.
yeah im aware of that now that i cant change it but they can just wont i didnt have a clue what raid 1 was when i ordered i dont need raid 1 but as you said it needs bios access which they have they just wont change
