I had the theory maybe they use the system where they count all the hosts on their DNS service ?

Only their own hosted sites of course. There is no way for OVH to know how many you have on your own dedicated servers.

Does this hosted sites include those on the dedicated servers? Or just on OVH's own hosting services.
