I think that might be the case indeed. Interestingly, just last night I did a Xen over Debian install, so I don't see why it wouldn't work in your case (with the exception of possibly no VT enabled).
Install Debian from OVH then install Xen using apt ("xen-linux-system-2.6.26-2-xen-XXXX" - where "XXXX" is your CPU - and "xen-tools"). Make sure that the initram is created and includes the drivers you currently use (network, raid). Finally, add the "noapic" option to the boot menu.lst kernel entry for Xen.
