A 1: If you're a business owner, browse the dedicated server offerings at www.ovh.co.uk and pick any of the SP, EG or MG series (not HG) that interests you. On your right hand side you will find a link to order a 30-day trial.
A 2: You can run any kernel you'd like at OVH, provided you know how to build your own (and that guide apparently walks you through this, though I do not have any experience with this particular setup).
As an alternative to XEN+OpenVZ, you can install Proxmox (see http://pve.proxmox.com), which gives you QEMU/KVM+OpenVZ. Proxmox is one of the distributions available at OVH (so you can select it during your trial order, or install it from your manager / control panel).
