I don't think you can change to RAID0 without reinstalling. The data is split between drives, it wouldn't be able to rebuild it on the fly.

I am running Virtual Machines on it so it's not possible to do so.
I know it's risky but I need it so any help would be appreciated.

What you are asking is very risky, we would recommend you back your data and reinstall, this will mean then your data is safe and get the RAID 0 configuration correct.
