If you have dedicated server ip, you can add a host name to different ip.

Hello, i want to buy a personal webhosting plan. The thing is i allready own a domain name from another company. To add a domain to ovh i think i need just to setup nameservers to ovh. But the thing is, after i want to add a hostname to different ip.
like : logon.domain.com to my dedicated server ip. is that possible ? like adding an A hostname to another ip than my webhosting ip.
so : www.mydomain.com and mail.mydomain.com to be on webhosting ip and logon.mydomain and other to be pointed to my dedicated ip.

I own a dedicated server from youstart, but i dont want to host my webpage on there from security things.
And one more question is if i can add the modules i need for my webpage(mod_rewrite, mod_headers, mod_expires, mod_deflate)
